Easy Creamy Beef Stroganoff
This recipe is a great cheat day meal and really quick to make in one pot. I wouldn’t recommend it every day, but whoever you share it with will love it. The technique is very important for this in comparison to other stroganoff recipes online. So pay attention when reading the recipe.

Ingredients
- 1 tbsp olive oil
- 1 onion, sliced
- 1 clove of garlic
- 1 tbsp butter
- 250g mushrooms, sliced
- 1 tbsp plain flour
- 500g fillet steak sliced, meatballs or mince
- 150ml of double cream
- 1 tsp English mustard
- 100ml beef stock
- ½ small pack of parsley, chopped
- Tagliatelle

Cook your meat with little veg oil til lightly brown, then add your onions - continue cooking for 5-6 minutes , season generously with salt and pepper (optional dash of paprika to the meat) and add press the garlic at the end after onions are almost cooked - only cook for a minute or two

While above is happening, In a separate pan cook wet mushroom slices on medium/high- I just rinse them (get good ones if you can) - by themselves - no oil or butter - until browned on both sides . Take the mushrooms off the plan - leave any dangling bits and pan dirty

Turn it on low heat. Put 1 tbsp of butter in the dirty mushroom pan. Put 1 tbsp of flour in pan in the butter and stir until it turns into a roux (a flour butter base - looks like yellow cream)- add more butter if you need to - see online for more on roux , only a minute needed for all of this

Add one teaspoon of Dijon to the roux , beef stock and add the cream as well. stir. Should get your sauce base out of this

Slowly Pour in the meat mixture and mushrooms into the sauce

Cook for a couple minutes and take off heat , garnish with chopped parsley and serve over Tagliatelle noodles and side of veg.
